Southwest Gold

A UC Davis improved bean that retains its color and elongated oval shape when cooked. They produce a nutty flavor and are renowned for their ability to absorb the spicy flavors from chiles. They make a hearty and nutritious soup or chili bean dish. Also known as "Zuni Gold".
